Job Purpose:

As Sous Chef with Long Beach Lodge Resort, you are responsible for assisting the Executive Chef in the success of food service for all food and beverage outlets including the Great Room, Sandbar Bistro, and catering. You are professionally committed to excellence and are passionate about the preparation, presentation, and execution of all culinary activities.

 

Duties and Responsibilities:

  • Ensure the highest level of service by exceeding guest expectations
  • Help manage all kitchen recruitment including training in all aspects of the department and Resort
  • Help manage menus, revenue, ordering and inventory control costs, ensuring financial targets are met
  • Help the Executive Chef with menu development, costing and inventory
  • Help manage staff making sure to send staff home when business levels are slow
  • Help provide coaching; address performance issues; and recognize employee successes
  • Help monitor the appearance, standards, and performance of the Kitchen Department with an emphasis on training and teamwork
  • Run the evening kitchen team in their service, maintaining consistency in quality of service and providing ongoing training opportunities
  • Commit to guest satisfaction through consistent follow up on all guest issues; delivering outstanding guest service recovery
  • Communicate effectively with all other departments; partnering to ensure property-wide service standards for our guests
  • Help with scheduling
  • Help the Executive Chef to ensure colleagues have full knowledge of all menu items, garnishes, contents and preparation methods being served in F&B outlets
  • Help maintain a clean, organized, safe, hazard‑free work environment
  • Ensure Food Safe procedures are followed and Occupational Health & Safety standards are maintained at all times
  • Ensure that all employees are practicing healthy and safe work practices, are aware of our green commitment and emergency procedures
  • Work the line and give prepared plates “the final touch”
  • Maintain good working relationships with suppliers
  • Maintain relationships within the local community
  • Update job knowledge by participating in educational opportunities; reading professional publications; maintaining personal networks; participating in professional organizations
  • Stay current on industry/competitive trends
  • Generally promoting and representing Long Beach Lodge in a professional manner
  • All other duties as assigned
Qualifications 

Qualifications:

  • Red Seal Certificate or equivalent
  • A secondary school diploma is required
  • Post-secondary education in Hotel/Restaurant Management is preferred
  • 3-5 years leadership experience in F&B service, preferably in a hotel environment
  • 3-5 years leadership cooking experience, preferably in a hotel environment
  • Previous menu design and costing experience
  • Ability to focus attention on guest needs, remaining calm and courteous at all times
  • Superior interpersonal and problem solving skills
  • Results and detail oriented
  • Creative, innovative, and embraces change
  • Leadership style- assertive, professional, positive and leading by example
  • Comprehensive knowledge of fine food wines and service
  • Computer literacy is imperative including Microsoft Office and Point of Sale System, preferably Micros
  • FOODSAFE certification required
  • Serving It Right certification required

 

Working conditions:

Flexible, must be willing to work a variety of hours, including days, nights as well as weekends and holidays based on the business needs

Physical requirements:

  • Constant standing and walking throughout shift for up to 8 hours
  • Frequent lifting and carrying up to 50 lbs
  • Kneeling, pushing, pulling, lifting
  • Occasional ascending or descending ladders, stairs and ramps
