Sechart Lodge is a completely off grid wilderness kayaking lodge located 1/2 mile from The Broken Group islands (Pacific Rim National Park) in Barkley Sound, off the west coast of Vancouver Island.
We require experienced cooks capable of cooking from scratch for up to 50. We do not have microwaves in our kitchen. Knowledge of fresh and dried herbs/spices for cooking is essential. Baking, ability to make various kinds of salads and sandwich artistry is required.
Must be hard working, extremely organized, willing to clean, do dishes and be comfortable interacting in a professional manner with guests and coworkers. This position requires the ability and willingness to do both Lead and 2nd cook duties. Light housekeeping duties may be required at times when needed. Ability to follow Food Safe and Work Safe regulations.
Start date is mid May to end September.
A commitment to end September is required. The work schedule is 2 weeks in / 1 week out. Daily wage includes transportation to lodge, accommodations, all meals and the use of a kayak when available on down time. PLEASE NOTE: We do not supply accommodation, meals, etc. while on your week off.
Menus are planned by our kitchen manager.
The following is a list of Specific Responsibilities & Duties:
• Prepare all components of the meal
• Follow the menu and recipes provided (should be capable of cooking basic meals without recipe)
• Ensure overall quality and presentation of the food is appealing
• Ensure meals are served on time
• Sanitizing all work surfaces and equipment used
• Be aware of restricted dietary needs of guests.
• Restock work areas and ensure proper stock rotation
• Clean the kitchen as per cleaning schedule
• Complete required HACCP logs
• Maintain safe work environment at all times
• Perform duties as per health and safety guidelines
• Other reasonable requests from management
• Food Safe 1 Certificate, Serving it Right, WHMIS, Bondable
• Previous experience in Fine Dining considered an asset
• Cook certification/papers- RED SEAL preferred but not required
• Previous lead cook and baking experience
• Positive attitude and strong work ethic
• Able to work independently and as part of a team
• Able to communicate with managers, guests and other employees
Clean and organize the kitchen at all times. Follow all required checklists and cleaning schedules during work shift.
Assure the proper care and maintenance of all food service equipment; identify equipment needs for food preparation and service.
Ensure food quality by maintaining high levels of cleanliness, organization, storage, and sanitation of food products.
Maintain a positive attitude that promotes teamwork within the lodge
